Infidel Cooking: The Recipe



From our chef:

My grandmother’s (Surah Bat Leizer) Lekach:

3 Eggs
1 cup honey
1 cup sugar
1 cup warm strong coffee
1/2 cup vegetable oil (I use canola; it’s not so intense as olive and also a lot lighter)
2 teaspoonfuls baking soda
2 teaspoonfuls vanilla
1 teaspoonful cinnamon
1 teaspoonful Nutmeg
1 teaspoonful allspice
1 teaspoonful ground cloves
2.5 cups flour
Raisins – about a half a handful
Orange Peel – about a half a handful
Walnuts – about a half a handful
Whiskey – ¼ cups
Raisins, orange peel, nuts and whiskey are optional and can be used together, just one ingredient or omitted altogether depending on your taste.

Beat the eggs with honey, then sugar. Add soda to coffee and pour into egg mixture together with oil. In a separate bowl mix all dry ingredients. Join the contents of the two bowls and mix well.
Bake at 350 F for about an hour.
